Associates Degree in Le Cordon Bleu Culinary Arts

Le Cordon BleuThis course of study is designed to provide a combination of culinary technique and management skills that will lead to a rewarding career in the restaurant, hospitality, or food service industry.

The Associate of Applied Science Degree in Le Cordon Bleu Culinary Arts provides an in-depth education in the management skills necessary to become an executive chef, sous chef, or another senior position in the restaurant or hospitality industry. Students are exposed to the principles of kitchen management, including menu planning, sanitation, food safety, and cost control.

This classroom education is combined with hands-on experience in the kitchen. Under the Le Cordon Bleu program, students learn food preparation essentials, preparing meats, soups, entrees, and desserts.

After completing a 12 month program of classroom and kitchen courses, each student participates in a 3 month externship at a leading restaurant, providing additional hands-on experience.

Focusing on the skills needed to prepare breads and pastries, the Le Cordon Bleu Patisserie and Baking program also teaches the skills needed to start a career in the culinary industry. Students learn front of the house and back of the house operations, and the principles of food service management.

Associates Degree in Le Cordon Bleu Hospitality and Restaurant Management

This intensive program prepares graduates for management positions in restaurants and other food service operations. The program begins with training in culinary arts, and continues with training in the operations of both the kitchen and the dining room. Students learn general management and supervisory skills, in addition to those used in the hospitality industry. Offered as a 45 week associate degree.
