Kendall College is a private, co-educational school located in Chicago, Illinois. The School of Culinary Arts was established in 1985, and is now considered to be one of the premiere culinary schools in the country. The faculty at Kendall College has over 550 years of experience in the culinary field.
Culinary students gain hands-on experience at the school's Dining Room, which is open to the public. Classes are kept to a limited number of students in order to allow full participation by all, and each student participates in an internship at an area hotel or restaurant.
Degree Programs and Courses of Study
Associate and Bachelor Degree in Culinary Arts
Kendall college offers three culinary programs: an associate degree, an accelerated associate degree, and a bachelor degree. The six term associate program provides the essential skills training needed by a working chef, while the five term accelerated program, designed for those already possessing a college degree, offers similar culinary training, without the general education component. The bachelor program offers an additional two years of study, and is available to those students having completed the school's associate program, or a comparable associate degree program from another institution. It features coursework designed to prepare the graduate for a culinary executive position.
Coursework in the lower division include sanitation and human nutrition, introductions to different types of food preparation, including garde manger, the bakery, and soups and sauces. Students are introduced to kitchen management with courses in dining room service, computers, and cost control. Different culinary specialties are explored, including French Classical and American Cuisine.
In the bachelor program, students gain experience with regional cuisines, including Asian, Mediterranean, and Central American. They explore issues including managerial accounting, labor relations, and marketing. Finally, they participate in a capstone project. The bachelor's program offers optional concentrations in Nutrition and Food Service Management.
In both upper and lower divisions, students are encouraged to take specialized culinary electives, which vary from quarter to quarter.

Baking & Pastry Arts Associate Degree and Certificate Programs
Students in the two year associate degree program in Baking and Pastry Arts are prepared for a position in a professional kitchen or bake shop. Courses are taught at the school's new bakeshop facilities in Chicago. The six term program includes courses in safety and sanitation, baker's math, and retail merchandising and catering. Additional courses teach the preparation of breakfast pastries, breads and doughs, wedding cakes, and ice cream and frozen desserts.
The Baking & Pastry certificate can be completed in under a year. It features 24 quarter hours of instruction and hands-on experience that provide an overview of baking and pastry. Experience gained in the certificate program can be transferred to the associate program.

Hospitality and Hotel Management Programs
Kendall College offers a bachelor degree in Hospitality Management with concentrations covering different aspects of the hospitality industry. Students get a chance to practice their skills in the school's on-campus Hyatt Suite, complete with rooms, front desk, kitchen, and dining area. For almost 20 years, the college has promoted high industry standards and effective managerial skills in its programs.
The Food and Beverage Operations concentration prepares graduates for managerial positions in the food service industry.
