California Culinary Academy

Located in San Francisco, the California Culinary Academy offers degree and certificate programs in preparation for a career in the culinary arts, baking & pastry arts, and hospitality & restaurant management industries. The school was founded in 1977 as one of the West's first culinary institutions. The Academy is dedicated to providing the highest standard of education to all students.
The Academy features an extensive learning facility designed so you can learn and apply your skills in your future career. The campus has a Basic Skills Laboratory for the development of fundamental culinary skills, baking and pastry kitchens, confiseries, butcheries, demonstration kitchens, lecture classrooms designed for wireless network access, mixology and gaming rooms for practicing bar and casino operations, a computer classroom with individual student workstations, and an extensive library.

Le Cordon Bleu Culinary Arts Degree Program
For students seeking a career as a culinary professional, the Academy offers an intensive program of study leading to an Associate of Occupational Studies (AOS) Degree in Le Cordon Bleu Culinary Arts. The Le Cordon Bleu program can prepare you for various positions in the food service industry -- including hotels, restaurants, clubs and resorts, cruise lines, and other careers requiring a culinary background.
The sixty week program includes these elements in its curriculum:
- Principles and Procedures of the Culinary Arts
- Food Preparation, including appetizers, soups, sauces, entrees, breads, and desserts
- Professional Kitchen Management Techniques, including sanitation, hygiene, cost control, and safety
- A three month externship at a site selected to enhance your career

Le Cordon Bleu Patisserie and Baking Program
The Academy offers an intensive program designed for those interested in professional baking and pastry. The Patisserie and Baking Program provides a comprehensive study of baking and pastry to prepare you for various positions at bakeries, pastry shops, restaurants, hotels, and the rapidly growing segment of in-store supermarket bakeries. The program emphasizes the hands-on application of fundamental techniques and ingredients.
The Patisserie and Baking Program includes the following elements:
- Cooking fundamentals, including ingredients, chemical reactions, and proportions
- Instruction in straight and sponge dough methods, fillings, pastries, puff pastry, specialty yeast dough items, and quick breads
- Preparation of cakes, creams, icings, pies, and sugar decorations
- Coursework in nutrition, safety and sanitation, and human resource management.

Le Cordon Bleu Hospitality & Restaurant Management Degree Program
The California Culinary Academy offers an Associate of Occupational Studies (AOS) Degree in Le Cordon Bleu Hospitality & Restaurant Management. Combining instruction in theory with hands-on experience, the program prepares you for a management career in a hotel, restaurant, casino, or cruise ship.
The 45 week comprehensive course of instruction includes coursework in:
- Hospitality Management practices, including front of the house and back of the house operations
- Hotel and restaurant management skills, including accounting, law, communications, and human resource management
- Specialized skills, including gaming and casino management, wine studies, culinary skills, and mixology and beverage service
- A nine week externship providing on the job experience in your chosen field, under the supervision of a hospitality professional
