Culinary Academy
The Culinary Academy consists of two New York campuses, one in Manhattan, and the other in Syosset. Formerly the New York Food and Hotel Management School, The Manhattan campus became part of the Culinary Academy family in 2005.
Culinary Academy of Long Island has been training future chefs since
1996. Students receive individual attention in small classes, taught
by seasoned professionals. The school uses a performance-based training
method that emphasizes the real-world skills that graduates will need
to be successful in their careers. The Academy is accredited by the Accrediting Commission of Career Schools/Colleges of Technology as a vocational school for training in the Culinary Arts field.
The school's teaching facilities are patterned after commercial kitchens, and
features three operating kitchens, a dining room, and a simulated restaurant
where students practice what they are learning. The school also has an extensive
library and resource center. Graduates are entitled to placement assistance
throughout their careers.
Courses of Study
Professional Cooking Diploma
The Academy's original culinary training program is designed to prepare the graduate for a career in professional food preparation. The program includes courses in basic cooking skills, food sanitation, and food preparation. In-depth training is provided in baking and cake decoration and quantity food production. Finally, students learn about restaurant operations and purchasing procedures, and participate in an internship. The program is offered with both morning and evening classes.

Commercial Cooking Diploma
This program includes many of the same courses as the Professional Cooking program, however it is designed for the non-traditional student that wants to take evening classes. Students "Learn by Doing" as they learn commercial cooking skills, catering, and quantity food production. Students gain hands-on experience by working in the school's restaurant, as well as in an internship.

Baking and Pastry Arts
The school offers two continuing education programs in Baking and Pastry Arts. Taught over a period of 13 weeks each, these Saturday classes include courses in bread and roll making, cakes and puff pastries, candy making, and cake decoration. The second program provides training in specialty cake production and presentation skills. Students learn icing, glazing and cake decoration, and the preparation of tarts, tortes, and specialty cakes.

Hotel and Restaurant Management
Students in the Hotel and Restaurant Management program have the opportunity to practice the operations found in most hotels and motels, including food and beverage operations, housekeeping administration, security, and back office operations. The learning environment includes computer facilities and software systems used in many hospitality operations. This program is offered at the Manhattan campus.
Restaurant Management
This program includes training in all aspects of restaurant management, including kitchen operations and front of the house business and supervisory duties. Courses include food and beverage operations, cost control, menu planning, and restaurant design. Students also learn food preparation and sanitation procedures, and complete an internship. The program is offered both in the mornings and in the evenings at the Long Island location.

Admissions and Financial Aid
The Academy provides assistance to those students who will benefit from financial aid. The school participates in many financial aid programs, including the Title IV Federal Student Financial Assistance program, and the Stafford loan program.
